Apple Coffee Cake

Adapted from Land O Lakes

2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter or margarine, softened
1 cup sugar
2 eggs
1/2 cup sour cream
1/4 cup milk
1 teaspoon vanilla
2 small apples, peeled, cored, and thinly sliced
1/2 cup packed brown sugar
1 teaspoon cinnamon
1/2 cup walnuts
2 tablespoons butter or margarine, melted
1/2 cup cream cheese, softened
1/2 cup icing sugar
1 teaspoon vanilla
3-4 tablespoons milk

1. Preheat oven to 350°F and grease 9x13" baking pan. In a bowl combined flour, baking powder, baking soda, and salt. Set aside.
2. In a large bowl cream together butter and sugar. Blend in eggs, sour cream, and milk until smooth and combined. Add vanilla followed by dry ingredients. Spread two thirds of the batter into the prepared pan.
3. Arrange apple slices evenly over the layer of batter. Top with remaining batter. In a small bowl mix together brown sugar, cinnamon, and walnuts. Sprinkle over batter and then drizzle over melted butter.
4. Bake cake 30-35 minutes or until golden brown and toothpick inserted in the center comes out clean. Let cake cool to room temperature before glazing.
5. For glaze, mix together softened cream cheese and icing sugar. Mix in vanilla and enough milk until desired consistency is met. Drizzle glaze over top of cake and then serve & enjoy!

This cake is best served with coffee or tea!

Triple Chocolate Muffins

1 3/4 cups flour
3/4 cup cocoa powder
3/4 cup light brown sugar
1 teaspoon baking powder
1 teaspoon baking soda
3/4 teaspoon salt
2 eggs
1 cup milk
1/2 cup melted butter, cooled
2 teaspoons vanilla
2 teaspoon vinegar
4 ounces white chocolate, chopped
2 tablespoons dark chocolate spread or Nutella

1. Preheat oven to 375°F and line muffin pan with muffin cups.
2. In a large bowl whisk together flour, cocoa powder, brown sugar, baking powder, baking soda, and salt. Stir in white chocolate chunks and set aside.
3. In another bowl whisk together eggs, milk, cooled butter, vanilla, and vinegar. Add to dry ingredients and stir until just combined.
4. Divide batter among muffin cups filling, 3/4 full. Dip your finger in water and poke a hole in the center of the batter. Spoon or pip in about 1 teaspoon of chocolate spread. Top with 1 teaspoon of batter to cover.
5. Bake muffins for 20-25 minutes or until muffins are hollow sounding when lightly tapped on the bottom and are firm to the touch. Let cool to room temperature and then serve & enjoy!

Makes 1 dozen.
